Cheesy Artichoke Squares
Another finger food that’s a great little appetizer. Alternate your favorite cheeses.
INGREDIENTS | SERVES 12–16
- Nonstick cooking spray
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 teaspoons minced garlic
- 1 (15-ounce) can artichoke hearts, drained
- 1 (8-ounce) package low-fat sharp Cheddar cheese, shredded
- 4 large eggs
- 1/2 cup Italian-style bread crumbs
- Salt and pepper to taste

Preheat oven to 350°F. Spray an 8-inch square baking dish with nonstick cooking spray.

In a medium skillet over low heat, heat the olive oil. Add the chopped onion and garlic, and cook until tender.

In a blender or food processor, chop artichoke hearts.

Transfer artichoke hearts to a medium mixing bowl, add sautéed onions and garlic, and remaining ingredients. Mix well.

Pour into the baking dish, and bake 45 minutes, or until golden brown around the edges.

Remove from oven and leave in the pan to cool, about 1 hour.

Cut into squares (about 1-inch) and serve immediately.
