Amazing Avocado Salsa
This is a terrific salsa; the avocado add-in really gives it that healthy kick! Serve it with fresh crudités, whole wheat pita triangles, baked tortilla chips, or an assortment of whole grain crackers.
INGREDIENTS | SERVES 4
- 1 small chili pepper, chopped
- 1 tablespoon fresh lime juice
- 2 ripe avocados, peeled, pitted, and chopped
- 1 (15-ounce) can diced tomatoes, drained completely
- 1 garlic clove, minced
- 1/4 cup fresh cilantro
- Salt and pepper to taste
- Tortilla chips, baked
In a medium mixing bowl, place chopped chili pepper. Add lime juice and avocado. Mash these ingredients with a potato masher until texture is chunky.
Mix tomatoes, garlic, and cilantro into the avocado mixture.
Season with salt and pepper.
Serve with baked tortilla chips or assorted crackers.
