Rice and Beans with Flair

The rice and beans can be served at room temperature, or if they have access to a microwave, feel free to let them warm it up!

INGREDIENTS | SERVES 1

  • Nonstick cooking spray
  • 1/2 teaspoon minced garlic
  • 1 tablespoon onions, finely chopped
  • 1/2 to 1 cup canned black beans
  • 1/2 to 1 cup brown rice
  1. Spray nonstick cooking spray into a frying pan. Over low heat, sauté garlic and onion until soft.

  2. In a small pot, warm beans on top of stove, adding the garlic and onion.

  3. Cook rice according to directions (consider adding a bouillon cube into the boiling water for more flavor).

  4. Mix the rice and beans together. Place in a plastic container.

Color Is Important When Packing Children’s Lunches

Make lunch more palatable by packing different colored items, too. Consider sliced colored peppers, or black olives; add a serving of pretzels, a serving of graham or animal crackers, a sliced peach or 1/2 cup strawberries in a plastic container. Don’t forget a drink—the best choice is a bottle of water.
