Chillin’ Chinese Salad

This is a fantastic Asian salad—add a protein source to make it a complete meal—sliced chicken breast, grilled shrimp, sliced flank steak.

INGREDIENTS | SERVES 4

Salad:

  • 1 (12-ounce) bag prepared coleslaw
  • 4 scallions, chopped finely
  • 1 (14-ounce) can mandarin oranges
  • 1/2 cup sliced almonds (optional)
  • 1/2 cup rice noodles (optional)

Dressing:

  • 4 tablespoons balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons sugar
  • 1 teaspoon pepper
  • 2 teaspoons ginger powder
  • 1 teaspoon poppy seeds
  1. In a medium mixing bowl, combine coleslaw, scallions, and mandarin oranges.

  2. Blend all dressing ingredients. Drizzle dressing on salad.

  3. Add optional rice noodles and almonds on top.
