Chillin’ Chinese Salad
This is a fantastic Asian salad—add a protein source to make it a complete meal—sliced chicken breast, grilled shrimp, sliced flank steak.
INGREDIENTS | SERVES 4
Salad:
- 1 (12-ounce) bag prepared coleslaw
- 4 scallions, chopped finely
- 1 (14-ounce) can mandarin oranges
- 1/2 cup sliced almonds (optional)
- 1/2 cup rice noodles (optional)
Dressing:
- 4 tablespoons balsamic vinegar
- 1/4 cup olive oil
- 2 tablespoons sugar
- 1 teaspoon pepper
- 2 teaspoons ginger powder
- 1 teaspoon poppy seeds

In a medium mixing bowl, combine coleslaw, scallions, and mandarin oranges.

Blend all dressing ingredients. Drizzle dressing on salad.

Add optional rice noodles and almonds on top.
