Goat Cheese Crostini
Feta or farmer cheese can be good alternatives—a quick and delicious snack.
INGREDIENTS | SERVES 4
- 1 (8-ounce) package goat cheese
- 2 teaspoons fresh lemon juice
- 1 garlic clove, minced
- 8 small whole grain rolls, cut in half
- Nonstick cooking spray
Preheat oven to 400°F.
Combine goat cheese, lemon juice, and garlic in a medium mixing bowl.
Slice rolls in half. Spray baking sheet with nonstick cooking spray. Place rolls in a single layer on the baking sheet.
Spoon goat cheese mixture onto each half of roll.
Bake for 8 minutes or until toasted. Serve immediately.
