Goat Cheese Crostini
Feta or farmer cheese can be good alternatives—a quick and delicious snack.
INGREDIENTS | SERVES 4
1 (8-ounce) package goat cheese
2 teaspoons fresh lemon juice
1 garlic clove, minced
8 small whole grain rolls, cut in half
Nonstick cooking spray

1. Preheat oven to 400°F.

2. Combine goat cheese, lemon juice, and garlic in a medium mixing bowl.

3. Slice rolls in half. Spray baking sheet with nonstick cooking spray. Place rolls in a single layer on the baking sheet.

4. Spoon goat cheese mixture onto each half of roll.

5. Bake for 8 minutes or until toasted. Serve immediately.
