Cottage Cheese Pancakes

These pancakes are delicious and conceal the high protein and calcium. Remember to purchase the cottage cheese with “twice the calcium” to get more bang for your buck.

INGREDIENTS | SERVES 3–4

1 cup “twice the calcium” low-fat cottage cheese

3 eggs

2 tablespoons trans-fat-free margarine

1/4 cup flour

1 teaspoon vanilla extract

1/4 teaspoon salt

Nonstick cooking spray

Sugar-free pancake syrup

  • 1. Drain liquid from cottage cheese by placing it in a strainer for 1 hour.

  • 2. Place drained cottage cheese, eggs, margarine, flour, vanilla, and salt in a mixing bowl. Beat until well blended. Cover and let stand for 30 minutes.

  • 3. Spray nonstick cooking spray into skillet.

  • 4. Cook pancakes on low heat, turning once until golden brown.

  • 5. Serve with sugar-free pancake syrup.
