Thai Tenderloin Salad
It’s okay—let them have a salad for a snack. Infuse it with delicious steak, and it may turn out to be one of their favorites. Serve with a piece of fresh fruit or some baked chips. Alternate with flank steak or London broil for a less expensive cut of meat.
INGREDIENTS | SERVES 4
1 pound beef tenderloin, trimmed
Nonstick cooking spray
3 tablespoons lime juice
1 teaspoon sugar
6 cups chopped romaine lettuce
1 cup thinly sliced red bell pepper
1 cup thinly sliced peeled cucumber

1. Turn on oven broiler.

2. Place beef on broiler pan coated with nonstick cooking spray.

3. Broil 6 to 8 minutes on each side, until meat is cooked to medium doneness.

4. Remove from oven, cover, and let stand 10 to 15 minutes.

5. Cut beef diagonally across the grain into thin slices.

6. In a large mixing bowl, combine lime juice and sugar.

7. Add the beef, lettuce, pepper, and cucumber to the juice/sugar mixture, and toss well.
