Thai Tenderloin Salad

It’s okay—let them have a salad for a snack. Infuse it with delicious steak, and it may turn out to be one of their favorites. Serve with a piece of fresh fruit or some baked chips. Alternate with flank steak or London broil for a less expensive cut of meat.

INGREDIENTS | SERVES 4

1 pound beef tenderloin, trimmed

Nonstick cooking spray

3 tablespoons lime juice

1 teaspoon sugar

6 cups chopped romaine lettuce

1 cup thinly sliced red bell pepper

1 cup thinly sliced peeled cucumber

  • 1. Turn on oven broiler.

  • 2. Place beef on broiler pan coated with nonstick cooking spray.

  • 3. Broil 6 to 8 minutes on each side, until meat is cooked to medium doneness.

  • 4. Remove from oven, cover, and let stand 10 to 15 minutes.

  • 5. Cut beef diagonally across the grain into thin slices.

  • 6. In a large mixing bowl, combine lime juice and sugar.

  • 7. Add the beef, lettuce, pepper, and cucumber to the juice/sugar mixture, and toss well.
