INGREDIENTS | SERVES 8–10
- 1 1/2 cups white rice, cooked
- 1 1/2 cups brown rice, cooked
- 1 cup low-fat mozzarella cheese, shredded
- 4 tablespoons Parmesan cheese, grated
- 1 egg
- 1/4 teaspoon oregano
- 1/4 teaspoon basil
- Salt and pepper to taste
- Nonstick cooking spray
Preheat oven to 350°F. Cook rice according to package directions.
In a medium mixing bowl, stir cooked white and brown rice together.
Add mozzarella cheese, Parmesan cheese, and egg.
Add seasonings, and mix well.
Spray nonstick cooking spray onto a baking sheet.
Wet hands with a small amount of water. Roll rice mixture into 1 1/2-inch balls. Place them on the baking sheets, not allowing them to touch.
Bake 20 to 30 minutes, until firm.
