Rice-A-Rolly

Another child-friendly experience—this can be a fun activity to do after school, and can be served at parties, holidays, or just for dinner; they are so easy.

INGREDIENTS | SERVES 8–10

  • 1 1/2 cups white rice, cooked
  • 1 1/2 cups brown rice, cooked
  • 1 cup low-fat mozzarella cheese, shredded
  • 4 tablespoons Parmesan cheese, grated
  • 1 egg
  • 1/4 teaspoon oregano
  • 1/4 teaspoon basil
  • Salt and pepper to taste
  • Nonstick cooking spray
  1. Preheat oven to 350°F. Cook rice according to package directions.

  2. In a medium mixing bowl, stir cooked white and brown rice together.

  3. Add mozzarella cheese, Parmesan cheese, and egg.

  4. Add seasonings, and mix well.

  5. Spray nonstick cooking spray onto a baking sheet.

  6. Wet hands with a small amount of water. Roll rice mixture into 1 1/2-inch balls. Place them on the baking sheets, not allowing them to touch.

  7. Bake 20 to 30 minutes, until firm.

Getting In That Extra Fiber

Who would have ever thought that brown rice would be yummy to a young child?

However, this recipe, which is fun for the kids to prepare, is a great way to influence good eating habits right from the start. Perhaps in the future, this dish can be made solely with brown rice, and the kids will enjoy it just as much.
