Fabulous Fruity Muffins
This is so easy to make—and a wonderful high-fiber, sweet snack. Add container of low-fat yogurt or low-fat, low-sugar chocolate milk for a perfect after-school snack.
INGREDIENTS | SERVES 12
- Nonstick cooking spray
- 1/2 cup sugar
- 3 eggs
- 1/2 cup shredded coconut
- 1/2 cup chopped dates
- 1/2 cup raisins
- 1/2 cup dried cranberries
- 1/2 cup chopped apricots
- 1/2 cup finely chopped walnuts

Preheat oven to 350°F. Spray muffin pan with cooking spray.

Beat eggs in a small bowl.

In a separate bowl, mix together the remaining ingredients.

Add eggs to mixture.

Pour batter into muffin pan. Bake for 30 minutes.
Dried Fruits—Incredible Sources of Nutrients and Fiber
These muffins are flourless, chock full of wonderful sweet dried fruits, and delicious. Mega amounts of fiber, “good fats” from the nuts, and the more color in the fruits, the more nutrient-packed they are—so apricots, cranberries, dates, and raisins are perfect. Add a glass of low-fat milk, or smear some trans-fat-free peanut butter on the muffins—a totally fulfilling after-school snack.
