Peach Frosty

A fresh summer treat—loaded with vitamin C and potassium—and nice and sweet!

INGREDIENTS | SERVES 2–3

  • 1 cup sliced peaches, in own juice
  • 2 tablespoons powdered sugar
  • 1/2 cup low-fat milk
  • 1 teaspoon vanilla extract
  • 1 cup low-fat ice cream
  1. Purée the peach slices, powdered sugar, and milk in a blender, until smooth.

  2. Add vanilla extract and ice cream and blend again until smooth.

  3. Serve immediately.

The Peach

Whether in a pie, a cobbler, or just sliced as a summer fruit, a peach is a low-calorie, high-fiber, fruit. Keep them at room temperature and they will ripen over the next several days. Do not remove the skin, as that is where most of the fiber lives.
