A fresh summer treat—loaded with vitamin C and potassium—and nice and sweet!
INGREDIENTS | SERVES 2–3
- 1 cup sliced peaches, in own juice
- 2 tablespoons powdered sugar
- 1/2 cup low-fat milk
- 1 teaspoon vanilla extract
- 1 cup low-fat ice cream
Purée the peach slices, powdered sugar, and milk in a blender, until smooth.
Add vanilla extract and ice cream and blend again until smooth.
Whether in a pie, a cobbler, or just sliced as a summer fruit, a peach is a low-calorie, high-fiber, fruit. Keep them at room temperature and they will ripen over the next several days. Do not remove the skin, as that is where most of the fiber lives.
