Goldilocks and the Strawberry Bear

This is the sweetest of desserts. Bear-shaped molds can be found in kitchenware stores or party supply houses. The dessert can also be prepared in individual dessert bowls.

INGREDIENTS | SERVES 6

1 (6-ounce) package sugar-free, fat-free strawberry-flavored Jell-O

2 cups boiling water

1 1/2 cups cold water

Bear-shaped molds

1 cup low-fat whipped topping

1 teaspoon vanilla extract

1 medium banana

1/2 cup strawberries, hulled and sliced

Strawberries for garnish (optional)

  • 1 In a medium bowl, dissolve gelatin in boiling water. Stir in cold water.

  • 2. Spoon gelatin into the bear faces, to fill them. Remove 2 cups of the prepared gelatin to another mixing bowl, and refrigerate. Chill the bear molds, and the larger bowl of gelatin, until gelatin is set.

  • 3. When the larger bowl of gelatin is set, fold in whipped topping and vanilla.

  • 4. Spoon whipped topping mixture into molds (on top of the bear gelatin) and refrigerate until set but not firm, about 15 minutes.

  • 5. Slice banana, then add strawberry and banana slices to the top of the mold. Cover bears and chill until set completely, about 4 hours.

  • 6. Unmold onto dessert plates. Garnish plates with strawberries, if desired.
