Cauliflower Bake

This is an interesting way to introduce cauliflower. You can substitute broccoli, too.

INGREDIENTS | SERVES 6–8

1 head cauliflower

4 tablespoons trans-fat-free margarine

3 tablespoons shallots, chopped

1 cup seasoned bread crumbs

  • 1. Preheat oven to 375°F.

  • 2. Remove and discard the core of the cauliflower.

  • 3. Place in microwaveable dish with 1/4 cup water. Microwave for 5 to 6 minutes, or until tender.

  • 4. In a small pan, melt margarine. Stir in shallots and bread crumbs.

  • 5. In a baking dish, place cauliflower, and top with bread crumb mixture.

  • 6. Bake for 15 to 20 minutes.

Cauliflower to the Rescue

Cauliflower is one of those cruciferous vegetables that needs to get some extra credit. Extremely high in fiber, folic acid, vitamins C and K, cauliflower can be prepared in several different tasty ways— sauté in olive oil, cook and purée in a blender with a little olive oil, or of course, roast with other vegetables. Available in grocery stores year round, the best cauliflower season is truly from December to March. Recent data suggest cauliflower, too, has cancer-fighting compounds, in studies focusing especially on breast, colon, lung, and prostate cancer.
