Special Sweet and Sour Pork
The tenderloin of the pork is a very lean cut of protein, quite lower in fat and saturated fat than beef.
INGREDIENTS | SERVES 8
2 pounds lean pork tenderloin
1 teaspoon salt
1 teaspoon pepper
2 tablespoons olive oil
1 (15-ounce) can crushed pineapple
1/4 cup apple vinegar
3/4 cup water
2 tablespoons reduced-sodium teriyaki sauce
1/4 cup brown sugar
1 green bell pepper, sliced
1 red pepper, sliced
2 cups brown rice, cooked

1. Season pork with salt and pepper.

2. In large frying pan, add olive oil, and heat over low heat.

3. In mixing bowl, combine pineapple, vinegar, water, teriyaki sauce, and sugar. Mix well.

4. Slice pork into thin strips, and place into frying pan. Sauté pork until cooked thoroughly (no pink inside), about 10 to 20 minutes.

5. Add the liquid ingredients to the frying pan, and allow the pork to continue cooking.

6. Add the vegetables and cook until they are al dente, about 5 to 10 minutes.

7. Serve over brown rice.
