A delicious way to serve fish—pancake style! Sometimes ketchup on the side really does the trick! A vegetable and a baked potato completes this easy dinner.
INGREDIENTS | SERVES 6–8
- 1 (15 1/2-ounce) can red or pink salmon, skinned and boned, juice reserved
- 2 eggs
- 2/3 cup onion, finely chopped
- 1/2 cup breadcrumbs
- Salt and pepper to taste
- 1/4 cup olive oil
In a large bowl, combine the salmon with the reserved juice, eggs, onion, and breadcrumbs. Add salt and pepper as desired. Set aside for 15 minutes.
With wet hands, mold mixture into thick pancake shapes.
In a large skillet, heat oil on low heat.
Pan-fry pancakes until golden brown, turning once. Drain on paper towel and serve.

Offer salmon to your youngsters. The notable part about salmon is that you can vary its preparation in different ways, so if they don’t love it poached, you can make salmon burgers, throw salmon on the grill basted with a little olive oil, or soaked in a wonderful marinade and then grilled or baked.
