Brave Bean Burritos
A quick dinner for all—everyone can assemble the burritos themselves— and in 10 minutes, dinner is ready. Add a big fruit salad and voilà!
INGREDIENTS | SERVES 4
- 4 corn tortillas
- 2 cups canned black beans, drained
- 1/2 cup prepared salsa (optional spice level)
- 1/2 cup romaine lettuce, chopped finely
- 1/2 cup tomatoes, chopped finely
- 2 ounces low-fat cheddar cheese, shredded
Warm tortillas and roll up in aluminum foil.
When ready to serve, fill each tortilla equally with beans, salsa, lettuce, tomato and cheese and close the burrito.
Warm in microwave about 30 seconds until beans are hot and cheese is melted.
Anatomy of a Burrito
As is, this recipe uses black beans—however, kidney beans or white beans or even fat-free refried beans offer great variety. Of course, the “spice-level” of the salsa can be altered, the vegetables that go inside the tortilla can also be different. Lettuce and tomato are the norm, but how about raw mushrooms, sliced colored peppers, jalapenos, shaved carrots, or cucumbers? Cheeses will add some additional protein and calcium—offer the children’s favorite low-fat cheeses. This makes the crowd roar!
