But according to new guidelines by the American Diabetes Association, diabetics can eat pretty much anything they like, provided they pay attention to their diet as a whole and monitor their blood sugar level two hours after meals to see whether any individual food elevates it. Studies show that raw produce is an excellent choice for diabetics because it supplies many needed nutrients for health. Unlike cooked produce, raw fruits, vegetables, and juices help stabilize blood sugar levels.
