Almond Loaf

Almonds are common ingredients in sweet Italian dishes. Enjoy this bread for breakfast or as a snack with tea.

Serves 10

  • 2¼ cups all-purpose flour

  • 1 tablespoon baking powder

  • ½ cup unsalted butter

  • 1 cup granulated sugar

  • 3 eggs

  • ¼ cup whole milk

  • 1 tablespoon almond extract

  • ½ cup chopped or slivered almonds

    • Preheat oven to 350°F. Lightly grease and flour a loaf pan. Sift together the flour and baking powder. Cream together the butter and sugar. Beat the egg, then add the milk and almond extract.

    • Combine the flour, butter mixture, and egg mixture. Fold in the nuts. Pour into the greased loaf pan.

    • Bake for 40 to 45 minutes. Serve warm.

    Just a Spoonful of Sugar

    When grinding almonds for a sweet recipe, put a spoonful of sugar in with the almonds to be ground. This prevents the almonds from getting too oily and forming a paste while being processed. Just be sure not to add too much sugar, especially if there is other sugar in the recipe.
