Fresh Vegetable Dip with Crusty Italian Bread

This is not a “classic” Italian dish, but it is a great recipe to use for entertaining. This dip can be served as an appetizer before a meal or as a snack.

Serves 10

  • 1 loaf fresh crusty Italian bread

  • 2 carrots

  • 2 bunches arugula

  • 2 red onions

  • ½ bulb garlic

  • 1 teaspoon red pepper flakes

  • 1½ cups mayonnaise

  • 1½ cups sour cream

    • Cut the bread into an oval bowl by hollowing out the center piece. Cut the center piece into bite-sized chunks.

    • Peel and finely grate the carrots. Clean and chop the arugula. Peel and mince the onions and garlic.

    • Mix together the carrots, arugula, onions, garlic, pepper flakes, mayonnaise, and sour cream.

    • Fill the bread bowl with the dip mixture and serve with the bread chunks for dipping.
