Fresh Vegetable Dip with Crusty Italian Bread
This is not a “classic” Italian dish, but it is a great recipe to use for entertaining. This dip can be served as an appetizer before a meal or as a snack.
Serves 10
1 loaf fresh crusty Italian bread
2 carrots
2 bunches arugula
2 red onions
½ bulb garlic
1 teaspoon red pepper flakes
1½ cups mayonnaise
1½ cups sour cream
Cut the bread into an oval bowl by hollowing out the center piece. Cut the center piece into bite-sized chunks.
Peel and finely grate the carrots. Clean and chop the arugula. Peel and mince the onions and garlic.
Mix together the carrots, arugula, onions, garlic, pepper flakes, mayonnaise, and sour cream.
Fill the bread bowl with the dip mixture and serve with the bread chunks for dipping.
