Cheese-Filled Prunes

The softness of the prunes and cheese paired with the crunchiness of the nuts in this recipe creates a fun texture.

Serves 10

  • 2 cups prunes

  • ½ cup pecans or walnuts

  • ¾ cup mascarpone cheese

  • ½ cup ricotta cheese

    • Cut the prunes into hollow halves. Finely chop the pecans.

    • Mix together the cheeses. Stir half the chopped pecans into the cheese mixture.

    • Stuff each prune with the cheese mixture and sprinkle with the remaining pecans. Serve.
