Artichoke Leaves

The most popular way to eat artichokes is to stuff them and then braise or bake them. The heart can be boiled, fried, or baked.

Serves 10

  • 1 tablespoon olive oil

  • 3 whole artichokes

  • ½ recipe Three-Meat Meatballs (page 201), unformed and uncooked

    • Preheat oven to 425°F. Lightly grease a baking sheet with the oil. Remove the outer leaves from the artichokes and snip off the prickly triangular end of each leaf.

    • Quickly blanch the leaves in boiling water, and shock in ice water to stop the cooking process.

    • Mound a spoonful of the meatball mixture on top of each leaf and place on the greased baking sheet. Roast for 8 minutes, and serve.
