Artichoke Leaves
The most popular way to eat artichokes is to stuff them and then braise or bake them. The heart can be boiled, fried, or baked.
Serves 10
1 tablespoon olive oil
3 whole artichokes
½ recipe Three-Meat Meatballs (page 201), unformed and uncooked
Preheat oven to 425°F. Lightly grease a baking sheet with the oil. Remove the outer leaves from the artichokes and snip off the prickly triangular end of each leaf.
Quickly blanch the leaves in boiling water, and shock in ice water to stop the cooking process.
Mound a spoonful of the meatball mixture on top of each leaf and place on the greased baking sheet. Roast for 8 minutes, and serve.
