Date Halwa (Khajoor Ka Halwa)
2 tablespoons Clarified Butter (see recipe on page 15)
1–1¼ cups finely chopped pitted dates
2 tablespoons heavy cream
2 tablespoons slivered almonds
Prep Time: 5 minutes
Cook Time: 5 minutes
A power-packed dessert, serve this along with some hot Indian tea (see Chapter 4).
Heat the butter in a medium-sized pan. Add the dates and sauté for 30 seconds. Add the cream and mix well. Remove from heat. Add the slivered almonds. Serve immediately.
If using the dates sold in a block, soak them in hot water for 10 minutes, drain, and then chop. If using loose dates, cut them with kitchen shears or chop them with a sharp knife dipped in hot water.
