Mint Chutney (Pudine Ki Chutney)
2 packed cups fresh mint
1-inch piece fresh gingerroot, peeled and coarsely chopped
3 tablespoons lemon juice
3 serrano green chilies, seeded and coarsely chopped
1 small red onion, peeled and coarsely chopped

One of the most popular Indian chutneys. A perfect dipping sauce, this even makes a unique salad dressing. This tastes best freshly made.
Combine all the ingredients in a food processor. Blend to a fine paste. Transfer to a bowl. Refrigerate, covered, until ready to serve.
