Peanut Butter Butterfinger Ice Cream

This is crispety crunchety peanut buttery goodness in ice cream form.

INGREDIENTS | YIELD: 1 QUART

  • 1 vanilla bean, split and seeded
  • 1¼ cup half and half
  • 1¼ cups smooth peanut butter
  • ¼ cup brown sugar
  • ½ cup granulated sugar
  • 2 cups heavy cream
  • Pinch salt
  • 1 tablespoon vanilla extract
  • 10 Butterfinger miniatures
  1. Heat vanilla bean, half and half, peanut butter, and sugars in a medium saucepan until steaming with little bubbles around the edges. Remove from heat. Add heavy cream, salt, and vanilla. Cover and refrigerate overnight.

  2. Add to ice cream maker and follow manufacturer's instructions for freezing. Just before storing, fold in whole Butterfinger miniatures; keeping them whole will prevent the crunchy center from softening or dissolving.

Butterfinger Candy

Butterfinger bars, currently made by Nestlé, were created by the Curtiss Candy Company in 1923. Butterfinger was the result of a contest to name this sweet and crunchy candy.
