Peanut Butter Ice Cream
Nothing beats the smooth flavor of peanut butter combined with icy cold cream. This popular favorite is the perfect filling for chocolate ice cream sandwiches or a layered ice cream pie.
INGREDIENTS | YIELD: 1 QUART
- 1 cup peanut butter
- 1 cup sugar
- 2 cups half and half
- ¾ cups heavy cream
- Pinch salt
- 1 teaspoon vanilla extract
Combine all ingredients in the food processor, and purée until very smooth. Chill in refrigerator for 2–4 hours, or overnight.
Once chilled, add to ice cream maker and follow manufacturer's instructions for freezing.
Natural peanut butter is not advised for ice cream recipes. When combined with other ingredients, natural peanut butter will release much of its oil, so it is best to stick with commercial brands for your ice cream making.
