17.00 pounds Maris Otter Ale Malt

2.00 pounds Crystal 55L

1.00 pound Biscuit Malt

1.00 pound Dark English Brown Sugar

Extract (for 16 pounds of Maris Otter Malt)

12.5 pounds Pale Liquid Malt Extract (LME) (Maris Otter Preferable)

Hops

1.5 ounces Target (8.8 percent AA) Pellet for 90 minutes

0 ounces Fuggle (5.0 percent AA) Whole for 30 minutes

1.0 ounce East Kent Goldings Whole (4.75 percent AA) Whole for 5 minutes

1 tablet Whirlfloc

Yeast

Wyeast 1275 Thames Valley

Mash Scheduleg

Saccharification Rest 150°F 60 minutes
