Bluebird of Hoppiness British IPA

Smaller than its younger American cousins, the British IPA pushes malt, but retains a crisp dry bite. Up in the Lake District a pub brewery in Coniston makes a wonderful Challenger-only bitter called Bluebird. This is the beefed up version.

For 5.5 gallons at 1.060, 13 SRM, 51 IBUs, 6.0 percent ABV

TIP

Swap hops around in this recipe as you feel. A bit of Goldings or Fuggles for the finish would be superb. Coniston makes a version of Bluebird Bitter that uses American Mount Hood in addition to the Challenger.

1.00 pound Crystal 55L

0.50 pound Crystal 75L

0.25 pound Biscuit Malt

Extract (for 9.0 pounds of Pale Malt)

7.00 pounds Pale Liquid Malt Extract (LME)

Hops

1.00 ounce Challenger (8.0 percent AA) Pellet for 60 minutes

1.00 ounce Challenger (8.0 percent AA) Pellet for 20 minutes

1.00 ounce Challenger (8.0 percent AA) Pellet for 0 minutes

Other Ingredients

1 tablet Whirlfloc

Yeast

Wyeast 1275 Thames Valley Ale / WLP023 Burton Ale

Mash Scheduleg

Saccharification Rest 153°F 60 minutes
