Belgie Guinness Foreign Stout

The Guinness folk have an open “secret.” They brew ten to twenty different versions of their iconic stout, each tailored to the local market. In Dublin for export to Belgium, the land of strong beer, they brew Guinness Special Export Stout, an 8-percent hammer of a brew.

TIP

Adding the hops in for ninety minutes boosts the amount of bitterness extracted from the glands. Going beyond ninety-minute boil time, while tempting, produces grassy, vegetal, nasty flavors.
