On the bigger side of the helles spectrum, this brew hits all the mash marks in an attempt to be faithful to the older style of long mash regimens. The end result is a beer that ends up being crisp even without a lot of hop or carbonation bite.

TIP

Munich's carbonate-rich water marks the primary difference between a helles and a Bohemian pilsner. The water pushes the malt character forward over the hops to make the beer feel sweeter.

0.50 pound Cara-Pils Dextrine Malt

Extract (for 9.50 pounds of Pilsner Malt)

8.0 pounds Pilsner Liquid Malt Extract (LME)

1.12 ounces Hallertauer Mittelfruh (4.2 percent AA) Pellet for 60 minutes

0.50 ounce Hallertauer Mittelfruh (4.2 percent AA) Pellet for 5 minutes
