TIP

This recipe uses flaked maize to avoid an American cereal mash process. If you want to go more traditional, replace the flaked maize with cornmeal and follow the steps listed for Dougweiser.

7.75 pounds Pale Malt Six-Row

25 pounds Flaked Corn (Maize)

Extract (for 6.75 pounds of Pale Malt)

4.75 pounds Pale Liquid Malt Extract (LME)

Hops

0.55 ounce Tettnanger Tettnang (4.5 percent AA) Whole for First Wort Hopping

0.55 ounce Cluster (7.0 percent AA) Whole for 60 minutes

0.85 ounce Tettnanger Tettnang (4.5 percent AA) Whole for 15 minutes

1 tablet Whirlfloc

1 tablespoon Yeast Nutrient

Yeast

Wyeast 2035 American Lager/Wyeast 1056 (ferment cool)

Mash Scheduleg

Protein Rest 144°F 30 minutes

Saccharification Rest 158°F 30 minutes

Mash Out 170°F 10 minutes
