Walls Scottish 80

The Walls family is an Orkney Island offshoot of the Wallace (as in William) clan. This recipe was brewed in honor of the family's heritage and tries to capture the simple beauty of malty Scottish ales.

Style: Scottish Ale

Brew Type: All grain

For 5.5 gallons at 1.042, 11.9 SRM, 22.0IBUs, 4.0 percent ABV

60-minute boil

Malt/Grain/Sugar

  • 6.50 pounds Maris Otter Malt/Golden Promise Malt
  • 1.25 pounds Crystal 55L
  • 0.40 pound Cane Sugar
  • 0.25 pound Torrified Wheat
  • 0.05 pound Carafa

Extract (for 5.50 pounds of Marris Otter Malt/Golden Promise Malt)

  • 4.00 pounds Pale Liquid Malt Extract (LME)

Hops

  • 0.40 ounce Wye Target (10.6 percent AA) Pellet for 60 minutes
  • 0.50 ounce Fuggle (5.1 percent AA) Pellet for 15 minutes

Other Ingredients

  • 1 tablet Whirlfloc
  • 1 tablespoon Yeast Nutrient

Yeast

    WLP028 Edinburgh Ale

Mash Schedule

Saccharification Rest 154°F 60 minutes
