The Walls family is an Orkney Island offshoot of the Wallace (as in William) clan. This recipe was brewed in honor of the family's heritage and tries to capture the simple beauty of malty Scottish ales.

- 6.50 pounds Maris Otter Malt/Golden Promise Malt
- 1.25 pounds Crystal 55L
- 0.40 pound Cane Sugar
- 0.25 pound Torrified Wheat
- 0.05 pound Carafa
Extract (for 5.50 pounds of Marris Otter Malt/Golden Promise Malt)
- 4.00 pounds Pale Liquid Malt Extract (LME)
Hops
- 0.40 ounce Wye Target (10.6 percent AA) Pellet for 60 minutes
- 0.50 ounce Fuggle (5.1 percent AA) Pellet for 15 minutes
