Monocle Single-Hop Extra Pale Ale

Extra Pale Ale is an emerging West Coast style. All the hop blast of an IPA wrapped up in a more imbiber-friendly package. Monocle consists of a bare-bones malt scaffold to hang hops from. If you're going all-grain, substitute about 8.5 pounds of American Two-Row malt and mash at 152°F.

For 5.0 gallons at 1.047 OG, 4 SRM, 49 IBUs, 4.7 percent ABV

60-minute boil

Directions

  • Follow the Steeping Grains and Extract Process.

  • Fermentation should take less than a week. If the yeast is dropping clear, skip the secondary on the beer and package right away.

TIP

Substitute hops of your choice to get a feel for them. Remember to keep the bitterness about the same. If you're not calculating IBUs, use the AAU rule of thumb to adjust the sixty-minute bittering charge. (1.5 ounces × 5.5 = 8.25 AAU.)

6.0 pounds Pale Liquid Malt Extract (LME)

Hops

1.5 ounces Cascade (5.5 percent AA) Pellet for 60 minutes

1.0 ounce Cascade (5.5 percent AA) Pellet for 20 minutes

1.0 ounce Cascade (5.5 percent AA) Pellet for 0 minutes

Other Ingredients

1 tablet Whirlfloc (or 1 teaspoon Irish Moss) Added at 20 minutes

Wyeast 1056 / White Labs WLP001 / Fermintis US-05
