Low-Fat French Onion Soup
Making this classic soup in the slow cooker helps reduce the fat. All you have to do at the end is ladle it into bowls and top with cheese toasts.
INGREDIENTS | SERVES 8
- 1 tablespoon olive oil
- 5 onions, chopped
- 4 cloves garlic, minced
- 1 teaspoon sugar
- ½ cup dry red wine
- 4 carrots, sliced
- 4 cups Healthy Beef Stock
- 4 cups Healthy Chicken Stock
- ½ teaspoon salt
- ⅛ teaspoon pepper
- ½ teaspoon dried marjoram leaves
- 1 3-ounce package low-fat cream cheese, softened
- 1 cup shredded Havarti cheese
- 2 tablespoons grated Parmesan cheese
- 8 slices Cracked Wheat French Bread
In 4- to 5-quart slow cooker, combine olive oil, onions, garlic, and sugar. Cover and cook on high for 1–2 hours, stirring occasionally, until the onions are deep golden brown. Halfway through cooking time, add the red wine. Do not let this burn.
Add carrots, Beef Stock, Chicken Stock, salt, pepper, and marjoram. Cover and cook on low for 4–5 hours. Meanwhile, in small bowl, combine cream cheese, Havarti, and Parmesan cheeses.
Preheat broiler. Spread cheese mixture on Bread slices and broil until cheese begins to brown.
Spoon soup into hot bowls and top with Bread.

Slow-Cooking Onions
Because the onions won't fill the slow cooker at least halfway, you'll need to stir them occasionally to prevent burning. For this reason, in the first step you can't just set the slow cooker and walk away. The method used in this recipe causes the onions to become very sweet and caramelized, and they add great flavor to this classic soup.
