Healthy Orange Pork Loin Roast

Pork roast is glazed with a flavorful onion and orange mixture that adds flavor and nutrition.

INGREDIENTS | SERVES 8–10

  • 1½ cups orange juice
  • ½ cup chicken broth
  • 2 tablespoons low-sodium soy sauce
  • 1 4-pound boneless pork loin roast
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 onion, finely chopped
  • ⅓ cup orange marmalade
  • ⅛ teaspoon white pepper
  • 1 teaspoon dried thyme leaves
  1. Combine orange juice, chicken broth, and soy sauce in a large cooking bag. Add the roast; seal bag and turn to coat. Place bag in large casserole dish; refrigerate for 8–24 hours.

  2. Preheat oven to 350°F. In large saucepan, heat olive oil over medium heat. Add garlic and onion; cook and stir until tender, about 5 minutes. Remove from pan with slotted spoon; place in 3-quart casserole dish.

  3. Remove pork from marinade; reserve marinade. Brown pork on all sides in hot pan, about 5 minutes total. Add to casserole dish.

  4. Add marinade, orange marmalade, pepper, and thyme leaves to pan; bring to a simmer, scraping up drippings. Pour over roast and cover tightly.

  5. Roast pork for 1¾ to 2½ hours until internal temperature registers 155°F. Remove pork from pan and cover to keep warm. Pour juices into a saucepan and bring to a boil; boil hard for 3–4 minutes until thickened. Slice pork and serve with sauce.
