Cranberry Meringue Drops
Meringues are the perfect nonfat cookie for any party. Folding in dried cranberries and two kinds of chocolate chips elevates them to decadent status!
INGREDIENTS | YIELDS 36 COOKIES
- 3 egg whites
- 2 teaspoons lemon juice
- ⅛ teaspoon salt
- ⅔ cup sugar
- 1 cup chopped dried sweetened cranberries
- ½ cup mini semisweet chocolate chips
- ¼ cup white chocolate chips, chopped
Preheat oven to 300°F. Line two large cookie sheets with parchment paper or Silpat liners; set aside.
In large bowl, combine egg whites with lemon juice and salt. Beat until soft peaks form. Gradually add sugar, beating until very stiff peaks form.
Fold in cranberries and both kinds of chocolate. Drop by teaspoons onto prepared cookie sheets.
Bake for 25–30 minutes or until cookies are set. Cool for 10 minutes, then place on wire racks to cool completely. Store in airtight containers.
