- 2 tablespoons olive oil
- ½ cup chopped yellow onion
- 2 cups sliced zucchini (about ½-inch-thick rounds)
- Salt, to taste
- Freshly cracked black pepper
- 1 cup marinara sauce
- ¼ cup shredded mozzarella cheese
- Chopped fresh parsley
Heat the oil in a medium-large nonstick skillet over medium-high heat. Add the onions and cook until soft, about 4 minutes.
Add the zucchini and salt and pepper to taste; cook, stirring frequently, for 4 minutes.
Add the marinara sauce and bring to a simmer; cook until the zucchini is tender when pierced with a fork.
Top with shredded mozzarella, cover, and heat until the cheese melts, about 3 minutes. Top with parsley and serve immediately.
