Zucchini Marinara

Use your favorite packaged marinara sauce for this preparation—but check the labels of the sauce, as many sauces have added sugars that increase the carb count.

INGREDIENTS | SERVES 4Carb Level: Low

  • 2 tablespoons olive oil
  • ½ cup chopped yellow onion
  • 2 cups sliced zucchini (about ½-inch-thick rounds)
  • Salt, to taste
  • Freshly cracked black pepper
  • 1 cup marinara sauce
  • ¼ cup shredded mozzarella cheese
  • Chopped fresh parsley
  1. Heat the oil in a medium-large nonstick skillet over medium-high heat. Add the onions and cook until soft, about 4 minutes.

  2. Add the zucchini and salt and pepper to taste; cook, stirring frequently, for 4 minutes.

  3. Add the marinara sauce and bring to a simmer; cook until the zucchini is tender when pierced with a fork.

  4. Top with shredded mozzarella, cover, and heat until the cheese melts, about 3 minutes. Top with parsley and serve immediately.
