Oven-Braised Fennel with Goat Cheese
This recipe has few ingredients, so quality is important. Goat cheese crumbles are available in the specialty cheese section of many supermarkets.

- 1 pound fennel bulbs, trimmed and cut into ⅛-inch-thick slices
- ¼ cup chicken stock
- ¼ cup goat cheese crumbles
- Freshly cracked black pepper
Preheat oven to 400°.
Place the fennel slices in an even layer in a medium-sized baking dish. Add the stock and cover with foil. Bake until crisp-tender, about 20 minutes.
Remove the foil and top the fennel with the goat cheese crumbles; bake until the cheese just starts to melt, about 3 minutes.
Transfer to a serving platter, sprinkle with pepper, and serve immediately.
