Green Beans with Roquefort Crumbles and Walnuts
A dish worth the effort for a special occasion. Substitute sliced almonds or pecan pieces for the walnuts if you like.

- 1 pound green beans, ends trimmed and cut into 2-inch pieces
- 4 slices bacon
- 4 ounces Roquefort cheese crumbles
- ¾ cup walnut pieces, toasted
- Freshly cracked black pepper
Bring a medium-sized saucepan of salted water to a boil. Add the beans and cook until crisp-tender, about 3 to 4 minutes. Drain and set aside.
Cook the bacon until crisp, drain, and cut or break into crumbles.
To assemble, place the beans on a serving platter and sprinkle bacon pieces, Roquefort crumbles, and toasted walnuts on top. Add a few twists of freshly cracked pepper and serve.
