Chopped Broccoli with Lemon Zest

A simple and easy summer dish with a clean, fresh taste. You can garnish this dish with Parmesan shavings or toasted pine nuts.

  • ¼ cup water
  • 1–1½ pounds broccoli florets
  • 3 tablespoons olive oil
  • ¼ teaspoon lemon zest
  • Fresh-squeezed lemon juice, to taste
  • ½ teaspoon salt
  • Freshly cracked black pepper
  1. Heat the water in a medium-sized saucepan over medium heat. Cook, stirring occasionally, until the broccoli turns bright green and is crisp-tender, about 5 to 6 minutes.

  2. Add the olive oil, lemon zest, lemon juice, salt, and pepper; toss to mix, and adjust seasonings as desired.

  3. Transfer to a serving platter and serve warm or at room temperature.
