Italian Sausage Skillet Casserole

This is a great family dinner—kids think of it as a pizza without the crust.

INGREDIENTS | SERVES 4

  • 2 tablespoons olive oil
  • 1 pound Italian sausage, cut into 1-inch pieces
  • 1 cup sliced red onion
  • 1 cup red and green bell pepper strips
  • 1 cup sliced button mushrooms
  • 12 ounces pizza sauce
  • ¼ teaspoon garlic salt
  • 1 cup grated mozzarella cheese
  • Red pepper flakes, to taste
  • Dried Italian seasoning, to taste
  1. Preheat broiler to low.

  2. Heat the oil in a medium-sized, ovenproof, nonstick skillet over medium-high heat. Add the sausage and cook until it starts to brown, stirring frequently, about 8 minutes. Add the onions, peppers, and mushrooms, and cook until soft, about 8 minutes.

  3. Remove from heat and stir in the pizza sauce and garlic salt. Top with the mozzarella.

  4. Transfer the pan to the oven and broil until the cheese starts to brown, about 2 minutes. Remember that the handle will be very hot when taking the pan from the oven.

  5. Garnish with red pepper flakes and Italian seasoning and serve hot.

Preparing Cheese

To shred a soft or semisoft cheese, pop it in the freezer for about 30 minutes before grating to make it easier to handle. It also won't stick to the grater as much.
