Island Grilled Pork Patties
Make sure you don't overcook the pork—it will get dry and chewy. Top with your favorite salsa or chutney to finish.

- 1 pound lean ground pork
- 1 tablespoon lime zest
- 1 teaspoon jerk seasoning
- ½ teaspoon ground allspice
- ½ teaspoon cayenne pepper
- ¼ teaspoon garlic salt
- 2 tablespoons chopped fresh cilantro
Clean and oil grill rack and place it about 4 inches from the heat source. Preheat grill to medium-high.
Lightly mix together all the ingredients and form into 4 patties, each about 4 ounces.
Grill for 7 to 9 minutes per side, turning once, until cooked throughout. Transfer the burgers to a plate and tent with foil to keep warm.
Let rest for 1 to 2 minutes to allow the juices to reabsorb. Serve hot.
