Endive Spears with Hummus and Sprouts
There are several flavored hummus selections available in the refrigerated section of most supermarkets.

- 16 Belgian endive spears
- 8 ounces traditional hummus or flavored hummus
- 2 ounces sprouts (alfalfa or radish)
Fan the endive spears on a serving platter.
Spoon a teaspoonful of hummus on the base of each spear.
Garnish with sprouts and serve.
There are a variety of sprouts available in the produce section—use a very fine sprout with a hint of green leaves, such as an alfalfa or radish sprout. Make sure you rinse them well under cold, running water and dry thoroughly with paper towels before using.
