Endive Spears with Hummus and Sprouts

There are several flavored hummus selections available in the refrigerated section of most supermarkets.

INGREDIENTS | SERVES 8
Carb Level: Low

  • 16 Belgian endive spears
  • 8 ounces traditional hummus or flavored hummus
  • 2 ounces sprouts (alfalfa or radish)
  1. Fan the endive spears on a serving platter.

  2. Spoon a teaspoonful of hummus on the base of each spear.

  3. Garnish with sprouts and serve.

Protein: 3g
Fat: 3g

Good Sprouts

There are a variety of sprouts available in the produce section—use a very fine sprout with a hint of green leaves, such as an alfalfa or radish sprout. Make sure you rinse them well under cold, running water and dry thoroughly with paper towels before using.
