Strawberry Parfait
This is a simple preparation that takes full advantage of those luscious ripe strawberries of summer.
INGREDIENTS | SERVES 4

- 1 cup strawberries, rinsed, dried, and hulled
- 1½ cups nondairy whipped topping (such as Cool Whip), thawed
- ½ cup light, sugar-free strawberry preserves
- 4 whole strawberries
- Fresh mint leaves, for garnish
Slice the strawberries lengthwise and divide equally between 4 chilled martini glasses or ramekins.
Combine the whipped topping with the preserves in a medium-sized mixing bowl and stir until evenly blended.
Dollop the mixture on top of the fruit or use a piping bag to top each with a rosette. Garnish each with a whole strawberry and a fresh mint leaf.
