Strawberry Parfait

This is a simple preparation that takes full advantage of those luscious ripe strawberries of summer.

INGREDIENTS | SERVES 4
Carb Level: Moderate

  • 1 cup strawberries, rinsed, dried, and hulled
  • 1½ cups nondairy whipped topping (such as Cool Whip), thawed
  • ½ cup light, sugar-free strawberry preserves
  • 4 whole strawberries
  • Fresh mint leaves, for garnish
  1. Slice the strawberries lengthwise and divide equally between 4 chilled martini glasses or ramekins.

  2. Combine the whipped topping with the preserves in a medium-sized mixing bowl and stir until evenly blended.

  3. Dollop the mixture on top of the fruit or use a piping bag to top each with a rosette. Garnish each with a whole strawberry and a fresh mint leaf.
