Grilled Pineapple with Coconut
This is a great recipe for an outdoor cookout. Peel and slice the pineapple in advance and you're ready to go.

- ½ ripe medium-sized pineapple
- 3 tablespoons dark rum
- 1 tablespoon brown sugar
- 1 cup nondairy frozen topping (such as Cool Whip)
- ¼ cup shredded coconut
Clean and oil grill rack, and position it about 6 inches from the heat source. Preheat grill to medium.
Peel the pineapple and cut crosswise into 6 slices about ¾ inch thick. Drizzle the rum over both sides and sprinkle with brown sugar.
Grill the pineapple, with the cover on, for 10 minutes total, turning once.
Transfer the pineapple to serving plates. Top with whipped topping and sprinkle with shredded coconut.
