Caramelized Pears with Toasted Almonds
Use pears that are ripe but still firm. Overly ripe pears will cook too quickly.

- 3 pears, ripe but firm, quartered, cored, and thinly sliced
- 1 packed tablespoon brown sugar
- 2 tablespoons sliced almonds
- ½ cup vanilla yogurt
- Fresh mint leaves, for garnish
Clean and oil broiler rack. Preheat the broiler to medium-high.
Fan the pear slices in concentric circles in a shallow ovenproof dish. Sprinkle the brown sugar over the pears.
Broil until the sugar is caramelized, but not burned, about 4 to 5 minutes. Sprinkle the almonds on top and broil for 1 more minute, until golden.
To serve, divide the pears among 4 serving plates. Top each with equal parts of the yogurt and garnish with mint leaves. Serve immediately.
