Cantaloupe Rings with Blueberries and Lemon Cream
Make sure the cantaloupe is ripe and pick over the berries to make sure all stems have been removed.

- ½ cup heavy cream
- ⅛ teaspoon Wyler's light, sugar-free lemonade drink mix
- 4 (1-inch-thick) cantaloupe slices, peel on, seeded
- 2 cups fresh blueberries
- Fresh mint leaves, for garnish
Combine the cream and lemonade mix in a medium-sized bowl and use an electric mixer to beat until soft peaks form.
Place a cantaloupe ring in the center of each dessert plate. Equally divide the blueberries in the center of each melon ring.
Top with equal portions of the lemon cream and garnish with fresh mint leaves. Serve chilled.
