Citrus Green Beans

Tender and crisp green beans are perked up with lemon and orange juice in this simple side dish.

INGREDIENTS | SERVES 6

  • 1½ pounds fresh green beans
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • ¼ cup orange juice
  • 1 teaspoon grated orange zest
  • 1 teaspoon salt
  • ⅛ teaspoon white pepper
  1. Bring a large pot of salted water to a boil.

  2. Trim green beans and rinse off. Add to water and bring back to a simmer. Cook for 3 minutes, then drain.

  3. In large skillet, melt butter and add garlic. Cook over medium heat until garlic is fragrant, about 2 minutes. Then add green beans; cook and stir for 3 to 5 minutes or until beans are crisp-tender.

  4. Stir in lemon juice, orange juice, orange zest, salt, and pepper, and heat through.
