INGREDIENTS | SERVES 6
- 1 tablespoon olive oil
- 2 shallots, finely chopped
- 3 cloves garlic, minced
- 1½ cups long-grain white rice
- ½ cup finely chopped dried apricots
- 2 cups apricot nectar
- 1 cup water
- 1 teaspoon salt

Add apricots along with remaining ingredients except butter. Bring to a boil, then reduce heat, cover, and simmer for 20 to 25 minutes or until rice is tender and liquid is absorbed.
