Vegan Tzatziki

Use a vegan soy yogurt to make this classic Greek dip, which is best served very cold. A nondairy sour cream may be used instead of the soy yogurt, if you prefer.

Vegan, Low-calorie, Low-fat, Low-carb, Lactose-free

INGREDIENTS | YIELDS 1½ CUPS

  • 1½ cups vegan soy yogurt, plain or lemon flavored
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 4 cloves garlic, minced
  • 2 cucumbers, grated or chopped fine
  • 1 tablespoon chopped fresh mint or fresh dill
  1. Whisk together yogurt with olive oil and lemon juice until well combined.

  2. Combine with remaining ingredients.

  3. Chill for at least 1 hour before serving to allow flavors to mingle. Serve cold.

What Is Tzatziki?

Tzatziki is a Greek appetizer that is also used as a sauce for Greek dishes such as souvlaki and gyros. It is made of strained yogurt (usually sheep's-milk or goat's-milk varieties) with cucumbers, garlic, salt, olive oil, and pepper. Some variations also include lemon juice and parsley or mint.
