Red Bean Ice Cream Shake
Red bean paste is a sweetened purée found in Asian groceries. Substitute red bean ice cream for the paste if available. Red bean paste is an excellent source of both protein and fiber. There is also some protein in the ice cream and milk.
Vegetarian, High-fiber

- 1 pint vanilla ice cream
- 1½ cups red bean paste
- 1 cup milk
Combine everything in a blender and blend until smooth.

Make Your Own
To make your own sweet red beans, which can be puréed in a food processor to make red bean paste, soak 1 cup dried adzuki beans in water overnight. Drain and put the beans in a saucepan with 4 cups water and simmer for 90 minutes. Stir in ½ cup sugar and cook for 10 more minutes, stirring often. Squash the beans with a wooden spoon in the saucepan and stir to thicken. Remove from heat and purée in a food processor for a smoother paste. Chill in the refrigerator before using.
