Gingerbread Fruit Dip

This dip is wonderful served with fresh fruits like apple and pear slices, banana slices, and strawberries.

Low-calorie, Low-carb, Vegetarian

INGREDIENTS | SERVES 12

  • 1 (8-ounce) package cream cheese, softened
  • ½ cup low-fat sour cream
  • ⅓ cup brown sugar
  • ¼ cup maple syrup or light molasses
  • 2 tablespoons chopped candied ginger
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  1. In medium bowl, beat cream cheese until light and fluffy.

  2. Gradually add sour cream, beating until smooth.

  3. Add sugar and beat well.

  4. Gradually add molasses and beat until smooth.

  5. Stir in remaining ingredients.

  6. Cover and chill for at least 3 hours before serving with fresh fruit.

Candied Ginger

Candied ginger is also known as crystallized ginger. It is made of pieces of ginger root simmered in a sugar syrup, then rolled in sugar. You can make your own by combining ¾ cup sugar with ¾ cup water and bringing to a simmer. Add ½ cup peeled and chopped fresh ginger root; simmer for 25 minutes. Drain, dry, then roll in sugar to coat.
